The word "bao" in Chinese (包) essentially means bun, so the phrase "bao bun" is not very descriptive. Instead, there is a wide variety of bao types. The one most people think of is called Baozi, a steamed bun with a savory filling, and is the recipe I'll share today. Place flour, milk powder, baking powder, yeast and sugar in a large bowl.

  1. Prepare 500 gr Farina 00
  2. Prepare 25 gr Olio di Riso o Burro fuso

  5. Take 8 gr Sale
  6. Get 25 gr Zucchero

It's very similar but this recipe is an upgraded version of the old one. To clarify, the term "bao buns" is actually redundant, since "bao" literally translates to "bun" in Chinese.

Steps to make Bao Buns:
  1. Nella planetaria sciogliere lo zucchero con il latte, l’olio e il lievito. Aggiungere in una volta sola la farina e il latte in polvere, impastare per amalgamare gli ingredienti ed avere un impasto liscio. Infine il sale. Finire di lavorare a mano e lasciare riposare circa 30 minuti.
  2. Dividere l’impasto in pezzi da 50 gr. Stendere l’impasto con il mattarello circa mezzo cm., prendere un coppapasta da 10cm e ritagliare le formine. Spennellare la superficie di olio e poi piegare in due. Appoggiare ogni panino su un quadrato di carta forno e mettere a lievitare 30/40 minuti coperti inserendo un pezzetto di carta forno tra i due lembi che non si attacchino tra di loro
  3. Per la cottura mettere a bollire dell’acqua in una pentola con il cestello a vapore, inserire i panini e cuocere per circa 10 minuti.
  4. Se invece lavorate le palline di impasto a formare dei panini otterrete i MANTOU, i panini al vapore. Quindi, dapprima appiattire leggermente l’impasto, poi prendere i lembi e portarli verso l’interno, continuare fino a formare la pallina pizzicando l’impasto per chiuderla. Arrotondare con la mano sul piano. Lievitazione e cottura come sopra.
  5. Io ho farcito i miei Bao buns con verza e carote tagliate a listarelle e stufate in padella con salsa di soia.
  6. Ready to serve and ENJOY!
