  4. Montate a neve gli albumi, uniteli all'impasto e mescolate delicatamente dal basso verso l'alto per incorporarli bene. Da ultimo aggiungete qualche mela tagliata a dadini tra quelle tenute da parte e mescolate bene il tutto.
  5. Imburrate, infarinate una tortiera e aiutandovi con una spatola versate l'impasto. Distribuite le mele rimaste sulla superficie; infornate in forno preriscaldato e ventilato a 180°C per 40 minuti. Fate la prova stecchino per accertarvi che sia pronta. Quando la torta di mele sarà tiepida spolverate con lo zucchero a velo.
